Aggregator apps bring discovery, but the customer relationship and much of each order's value stay with the platform. Many restaurant brands and cloud kitchens now want a direct channel for regulars, with their own offers and customer data.

Food delivery app development for that channel differs from building an aggregator. The menu must mirror what the kitchen can make right now, orders must reach the kitchen display instantly, and the delivery partner should arrive as the food is packed.

How it works

How a food order moves from menu to doorstep

The customer’s wait, the kitchen’s prep time and the delivery partner’s travel time are planned together, so food does not sit on the counter.

    They choose dishes with sizes and add-ons, see a delivery time based on real prep times and pay by UPI, card or wallet.

    Step 3: The KOT reaches each station

    A kitchen order ticket prints or appears on the kitchen screen, split by station, with a timer for each dish.

Plain-English glossary

Kitchen and delivery jargon, explained

KOT (kitchen order ticket)
The printed or on-screen instruction telling cooks what to prepare for an order. In a delivery set-up it appears the moment an order is accepted, on a thermal printer or kitchen screen, split by station if needed.
Kitchen display system
A screen in the kitchen that replaces paper KOTs, showing each order with timers and letting cooks mark dishes ready. It makes late orders visible before they turn into complaints.
Menu modifiers
The sizes, add-ons and choices attached to a dish, such as half or full, extra cheese or spice level. Modelling them properly keeps the kitchen ticket clear and the bill correct.
Order throttling
Automatically slowing intake when the kitchen is overloaded, by lengthening quoted times, hiding slow dishes or pausing delivery orders for a few minutes. It protects food quality at peak hours.
Channel manager
Middleware that keeps menus, prices and sold-out items in step across your own app and aggregator apps, and brings all their orders into one queue for the kitchen.

Frequently asked questions

Can our own ordering app run alongside Swiggy and Zomato?

Yes, and many brands run both. Aggregators help with discovery; your own app serves regulars with better offers and gives you the customer data. The practical issue is keeping menus, prices and stock consistent: a channel manager such as UrbanPiper, or your POS, can sync them. Check your aggregator agreements for any pricing terms.

How are delivery times estimated?

We combine the kitchen's prep time for that order, which staff can adjust on acceptance, with travel time from the outlet and current load. Partners are assigned so they reach the counter as the food is packed. The customer's estimate updates as each stage completes, and the dashboard compares promised and actual times so you can tune the defaults.

Can one app serve several cloud kitchen brands?

Yes. Each brand can have its own storefront, menu and branding while sharing one kitchen, one display and one fleet. When a customer orders from two of your brands, the orders can go out in a single delivery. Reporting stays separate per brand, so you can see which ones earn their place.

How do you stop the kitchen being overwhelmed at peak times?

The kitchen app can throttle automatically when open orders cross a limit you set: extending quoted times, pausing slow-to-prepare items or switching to pickup only. Staff can also snooze the outlet for a few minutes with one tap. These rules protect food quality and delivery times without switching off the whole channel.

Do orders print as KOTs in the kitchen?

They can. Accepted orders print kitchen order tickets on network or Bluetooth thermal printers, split by station if needed, or appear on a kitchen display with timers. If you already use a POS for dine-in, we usually push online orders into it so the kitchen works from one queue rather than two.
